The degree course at the University of Gastronomic Sciences provides students with a comprehensive education in both sciences and humanities. Graduates will be qualified to work at an international level in the fields of production, processing, distribution and promotion of food and beverages.
The gastronomist trained at the University of Gastronomic Sciences represents a new kind of professional capable of entering the employment market with a solid cultural background, a comprehensive and multidisciplinary knowledge of food culture and science and first-hand experience of production processes and regions.
Three-Year Undergraduate Degree
The three-year degree course in Gastronomic Sciences offers an education in the fields of history, the humanities, science and technology, economics, management and food communications. The objective is to produce graduates able to occupy a variety of different positions: in commerical and protective consortia; industrial, commerical and catering companies; associations of producers, restaurants or hotel chains; food communication and teaching; any public and private organizations, authorities and companies in which the knowledge of the food, production and consumer sectors is indispensable. The degree course is held at the Pollenzo campus.

The following program, for a two-year Graduate Degree in Gastronomy and Food Communication, is currently under development and has been submitted to the Ministry of Universities and Research for examination and approval.
Upon approval, the program will take place at the Pollenzo campus of UNISG, beginning in the academic year 2007-08. The following is an overview.
This two-year degree focuses on the economics, communications, and business administration of food and gastronomy industries. Designed as a specialization program to follow the UNISG three-year degree in gastronomy, it is also open to graduates of other related bachelor-degree programs internationally. The first year of the program will begin in January 2008 and take place at the Pollenzo campus of the University.
The course’s focus is to produce graduates ready for roles in the management and operations of food-and-wine tourism and high-quality food production businesses. It may also serve as the foundation for additional study at the doctoral level. The three interconnected subject areas build cross-disciplinary expertise, grounded in both contemporary realities and historical traditions.

The postgraduate Master programs were created to provide students with an in-depth knowledge of food and beverages, with particular attention being paid to gastronomic and sensory value and cultural significance. Topics covered include agricultural practices and land use, production processes, culinary transformation, tasting and sensory analysis, distribution, marketing and communications. Both Masters are held at the Colorno campus of the University of Gastronomic Sciences.
