It is true that the doors on a jet do not open in mid-flight. But, let's assume that, in an emergency, the pilot could open them. Even so, there would be problems.
For one thing, parachutes are pretty bulky. People would not fit in the airplane, if it was filled to capacity and if everyone put on a parachute at the same time.
Also, the cruising altitude (close to 40,000 feet) that most jets fly at, is a problem. The air is so thin and cold that most people would freeze and/or suffocate at that height. Still, the pilot could wait until the plane was at, say 4,000 feet, before opening the doors.
But jet engines, even when they are shut off would suck in anything (or anyone) within 100 feet of them. I guess it would be possible to block the engine's intake, in an emergency, if people really wanted to design them that way.
But even with trained parachute users there are often accidents. So, to use parachutes effectively, even if everything else worked, every passenger would need several days or weeks of training to use parachutes safely and effectively.
Somehow, I just cannot see hundreds of passengers without any training, jumping out of a crashing jet, in mid-air, simply floating to safety like butterflies. My feeling is that people would bump into each other in the air, be unable to open their parachutes exactly when needed, and many would panic and open their parachutes inside the airplane, killing themselves and others. Still, of course, a few would survive, in the end.
Overall, though, I think the feeling is that parachutes are simply impractical. Air travel is a worldwide, multi-billion dollar industry. If there were any way that parachutes were practical, airlines would be using them. Instead, they have rafts and slides -- both of which can be used only after the plane lands -- either on water or on land.
An airplane is essentially a pod. The only real way safety can be improved is to make the pods smaller (carrying fewer passengers at a time) but much faster. That way, people would be in the air for a shorter time, airlines could build in more safety features into each pod and, even if things did go wrong, fewer people would be affected.
