Green is chosen because it rarely conflicts with other colours. The purpose of a green screen is to be able to quickly select the area and remove it in post processing, and replace it with another image. The software selects the area by color, so if something is similar in tone to the background, it will be removed too. For example, if you use a red screen, you risk removing skin, as it has red tones. With darker coloured screens, you can lose hair. Green is used because there are no green tones in your skin/hair/whatever. Sometimes other colours are used (blue is usually the default alternative) if clothing or props or whatever have to be green and can conflict with the screen, but green is usually the safest choice
